Sauvie Island One of the Best Days of Fall

Yesterday, Mr. I and I biked Sauvie Island which is just outside of Portland along the Columbia River. The bike loop the is a "must do" ride for the Fall. When you cross the little bridge to Sauvie Island, the bridge looks down on the most prolific, beautiful pumkin patches you have ever seen. It is instant "Fall".

Ok this view is about 100 feet in the air above the fields. These pumpkins are HUGE. All individually cut and displayed in the field. Man must be a lot of work. The color of the pumpkins is much brighter orange but the day was so bright and beautiful it kind of washed out the pumpkins. But aren't they lovely?

So we biked and picnicked. There is a bird refuge that we picnicked at that was amazing to watch thousands of birds, ducks, geese, swans, herons, cranes all fly into their wintering grounds. You wouldn't believe the sound. But the best was yet to come.....
We went to the Pumpkin Patch, which we haven't done since Andrew was little. The Pumpkin Patch is a farm on the island that has a HUGE barn full of veggies and fruit. A huge barn of animals to see. 2 complicated Corn Mazes, one haunted one not. It has a huge field of flowers to U-Cut (My personal favorite), free hayrides a gift store, a cute cow train that hauls the kids around the farm. Little Booths with food, elephant ears burgers etc. Plain and simple fun fun fun.

It is so much fun to walk through a field with flowers towering over you picking each flower of your choosing...Ahhhhhh

So in closing, it was the perfect fall day. Get out there if you get a chance with the last few decent weather days. My favorite season.

Fav Ingredient and Equipment.....Carrot Cake Bliss Want One?

This morning it was cold. Fall cold. Which always makes me feel like baking. So I decided I would bake a carrot cake. The reason why?  I  don't like Carrot Cake. I only like Chocolate Cake. I have strong opinions when it comes to cake. So, if I made one, I figure Mr. I and Mini Bus would eat it and I would get the baking bug satisfied. Oh yes,  And I would be able to use the attachment I've never used on my food processor. So, with all the benefits and no calories all I needed was a recipe. The first thing I did was try the shredder on my food processor. Oh yeah baby. Shear perfection. No mess, No hassle And the color of the carrots...Fall isn't it?

I've been on a Whole Wheat kick lately and wanted to use Whole Wheat flour. So I pulled out the bag. Which is my new favorite ingredient.



Now Bob's Red Mill Products are F A B U L O U S! Local Company and I hope they are making millions. Their products are healthy, whole grain based. They are always coming out with something new. I've used their Flax products and spices but my current favorite is the Whole Wheat Pastry Flour. Again, at Winco, this was marked down $2.48. The quality is A++++++. The best part of this product is it's address. 13521 SE Pheasant Court Milwaukie, Oregon  97222. I LOVE LOCAL.

On the back of the bag is the best recipe for Carrot Cake from the Grand Prize Winner of the Bob's Red Mill Natural Foods Baking Contest , Nola Silver of Seattle Washington.

Instead of using the cream cheese frosting I sprinkled Turbanado Sugar (Raw Sugar) when it was hot out of the oven. Cuts the sugar and fat, but adds some crunch. Oh yes, it has a secret ingredient, crushed pineapple.

Ok, so the cake was cooling and when the sugar went on it looked so....so....tempting. So I made a cup of hot tea and went to another room. Then I had to walk through the kitchen and noticed the smell of the cake and the sugar was "sparkling" at me. So, I continued to walk to the knife drawer and cut the cake. It was cooling after all. Then I .....I....




 Ok...... I ate a piece. And it was F A N T A S T I C! Dense, Moist, whole grain and good for you. Especially with the tea. And the crunch of the sugar...heaven. So I figured out why I didn't care for Carrot Cake, I think the frosting was too much and the cake was never this dense and moist.  This might be an even better cake than a chocolate cake........Nahhhh. but it is really really good.

The Path Home

Well, back to Miami and onto Washington today.....The beauty and warmth and weather will be unforgettable for us. We puttered back on Highway 1 and stopped here and there and stuck our feet in the water and took a few photos, and tried to come up with an idea to sell everything and move. One of the biggest takeaways from this trip is it really is equal to going to Cancun or Maui. Except the food is better and it's much cheaper to have a lot of fun. So I suppose this place becomes our new vacation spot. Somewhere to take future grandchildren and family and friends. Yes, the Florida Keys is just that awesome and welcoming. See you in Vancouver. Last Day in Key West

Today is Snorkel and Pool day on the keys. Tomorrow we drive to the airport and head home. So today we want to chill by the pool, do a little shopping and we booked a snorkel/sunset trip that sails about 10 miles out to the 3rd largest Coral Reef in the World. Now, I love love to snorkel, and Mr. I hates hates to be on the open sea, so he is really sacrificing to come with me on this trip. We met the nicest family from Uruguay, I love it when you have to really work to communicate. They really love America and it reminds me of how much being an American is longed for by most folks in the world. "Daniel" said to me "It is my dream to live in America" Exact words.  The snorkeling was Awesome, and the Sunset that night was the most beautiful Sunset I have seen in 53 years of living. No kidding. So Enjoy some pics......

Day 4 Jet Ski's My new Love I want one for Christmas, Yamaha, Red Oh yeah baby

 This day was Fantastic. We rented Jet Ski's which I have always wanted to do. I learned how to handle them quickly and I have to say It Was The Most Fun EVER! We toured around the entire island of Key West going though the Gulf of Mexico and Atlantic ocean. It was beautiful and exhilarating. There aren't many pics which I'm sad I didn't get one of me on my new favorite toy "Yamaha". Man oh man what a day. Oh yeah, Mr. I had fun too.

Day 3 Plan B-Reporting from Key West



Ok, the morning of Day 3 was not as expected. Mr. I became ill, meaning sore throat probably something caught on the plane, miserable hacking etc. So I went into wife gear and went to the store. Picked up the correct meds to knock him out cause the sooner he gets over this the sooner we can have fun right?

So I tucked him in and checked my watch and it was 11 am. Hmmmm, what should I do? Should I stay by Mr. I's side listening to him sort of snore and moan or should I go get some lunch and make a list of the things I wanted to do that he might not want to do so much. I picked the later.  My List was as follows:


1. Take a long walk along the Atlantic.
2./Have some lunch.
3. Drive the rental car.
4. Find Key West Cemetery and check it out.
5. Find St Mary Star of the Sea Parish to walk the church and Grotto (More on this in a separate post later)
6. Ernest Hemingway House
7. Find a Cuban Store to look at some art etc.
8. Find a good Smoothie.
9. Find my way back in one piece. And hopefully Mr. I will feel well enough to go to watch the sunset at the Sunset party that is held everyday 365, at the pier at the Southernmost Tip of the USA. (Glad someone thought to establish this way for the US to say goodnight to all.)
10. Go to the Southernmost Point in the USA at the end of Whitehead Street.
11. And finally, maybe a few surprises for Mr. I cause nobody should be sick on their vacation.

I managed everything on the list as follows:

Took a long walk about 3 miles on the Atlantic walkway that runs the length of I think the east side Key West. Great way to get a feel for the weather and the town.

Had lunch at the hotel, the only pic I have is of my little friend the lizard that ate with me. Can you see him?



Mustered courage to go off on my own in the rental car. Just feels weird without Mr. I but I did it!  With no incidences to speak of.


Off to the Key West Cemetery. Now some folks have a dislike for cemeteries. Me, I love em. So quite and park like. Lots of history and reverence. Just look at the pics.



The next stop St Mary Star of the Sea Catholic Church and Grotto of Sister M. Louis Gabriel, Remember she was the nun with the vision of protection over Key West. Fantastic. Really is so awesome to go into an empty church with the shuddered doors all open around the entire church to say some prayers and light a few candles.

Then off to the Hemingway House. Definitely cool. He lived in a nice place with good weather. The room he wrote in is in a building in back of his house that is sort of a guest house. It was cool to see the office/den that he wrote in.

This house has character, it's about the same size as my house but Location Location Location. The style and grounds with natural botanicals was just the best. I was thinking he probably never did yard-work. No leaves or pruning. the Coconuts just fall to the ground. No carpets, I guess all you'd need is a mop.

Love Love the upstairs wrap around veranda lined with these shuddered windows, keeps all the rooms nice and cool.

I self guided through the house, went to the gift shop etc. If you go, don't pay for the tour. The gift store and website will fill in the gaps.

Ok, so now I'm feeling pretty comfortable roaming around town so......


off to the Cuban store, which was really fun. I love love the Cuban art and I picked up a few things. Which I'll share later. Wouldn't want to spoil a surprise.

Found a great place for a smoothie on Duvall Street. Cantaloupe, Strawberry and Orange. No alcohol, I considered it, but I had that pesky rental car.

Rushed to the hotel, and Mr. I was sort of ok, so we decided to check out the "Southernmost point in the US, and catch the Sunset Celebration at Mallory Square.

The Southernmost Point of the United States is at the end of Duval Street. It really feels like your at the edge of the country. Must see when in Key West.



We then made our way to Mallory Square which is at the opposite end of Duval and Front Street. Each evening there is a Sunset Celebration. Meaning, everyone sort of gathers at the huge pier there and watch the sunset. Magicians, palm readers, acrobats street folk all try to gather the tourist dollar for some open air entertainment. And the sunset is guaranteed beautiful every single night, 365. After the sunsets, there's a Cuban outdoor bar that has music and fun. It's also a must do in Key West.





We hung around Mr. I enjoyed some Cuban coffee. It was a great night and we went home early hoping the Mr. I would recover sooner. But I'm sure the sunset helped. All in all it was a good day. Love Mamabus
